Balsamic Tortellini

It’s hard not to love this one.  It’s super yummy and takes less than five minutes prep time to make.  In fact, the extent of your effort will be to boil a pot of water… you’ve gotta love that!  On top of that, those you prepare it for will applaud your culinary inaction with all kinds of compliments.  Just be polite and say thank you anyway.

Prep time: 5 minutes

Serves 6

Ingredients:

1-2 TBS olive oil (*see note)

2/3 cup freeze dried onion

1/3 cup water

1 (2.8 oz) jar Hormel Real Bacon Pieces

1/3 cup Parmesan cheese

2 (7 oz.) boxes Cheese-filled Tortellini

2-4 TBS Balsamic Vinegar (to taste)

Bagged as a pantry meal

Instructions:

Rehydrate onions with water.  Meanwhile, bring a pot of water to boil.  Add pasta and cook for 8 minutes or until al dente.  Drain pasta and add olive oil, onions and bacon.  Reserve 2 TBS parmesan cheese (set aside) and add remaining cheese to pasta.  Add vinegar, toss all together, and serve (sprinkling reserved parmesan on top).

Rehydrate onions and cook pasta.

Just so you know, I ♥ garlic olive oil!

Drain pasta and add bacon, onion and parmesan cheese

Add the balsamic vinegar and combine.  Sprinkle reserved Parmesan over top when ready to serve.

Wait?  Dinner already??  … Oh yes.

Notes:

  • Of course you can use regular olive oil just the same.  To find the garlic olive oil that I love so much you may have to shop around a little bit.  Higher end grocery stores carry it so check around.
