Print the recipe card! potato soup
This is my super fast and easy pantry meal potato soup recipe — again, another meal everyone likes and can be ready to serve in 10 minutes or less! This recipe (shared with permission) comes from the book “Dinner’s in the Jar” .
Prep Time: 10 minutes
Ingredients:
2 cups instant potato flakes (see note)
1 3/4 cup powdered milk
1 cup dried potato dices
1 cup dried sweet corn
2 cans diced ham
1/2 cup parmesan cheese
2 tsp. onion flakes
1 tsp. parsley flakes
2 T beef bouillon
1/2 tsp. garlic powder
1/4 tsp. pepper
1/4 tsp. thyme
Bagged as a Pantry Meal
Instructions:
Bring 10 cups of water just to a boil. Turn off heat and add contents of bag. Cover and let sit 5 minutes. Add ham dices and heat for about 5 minutes until blended.

Notes:
- The original recipe calls for 2 cups instant potato flakes. When I made it last I thought it needed more potato flakes to thicken it so I increased the amount to 3 cups (which is what you’ll see in the printable recipe in the recipe index). This time around it was much too thick with the 3 cups (I added water to thin it out) so I’m going to change it back to 2 cups in my next batch.
- If you have a food saver these pre-bagged pantry meals store nice (and compact) having been vaccuum sealed first. That’s in addition to the bonus that you’ll be able to store it longer this way. Be sure to label well including the date that you packed it. On mine the #14 indicates that it’s soup recipe #14 in my book.

I made this for dinner tonight and added a handful of dried garden peas and a shake or two of dried chives. Yummy! I think the potato soup base would work with just about any protein you had available if you didn’t have/want ham and could add some variety to your pantry meals. I’ve got a can of crab I’ve been wondering what to do with, and I think I have my answer now 😀
That would be good with crab. I want to try it too!
Are the free classes videos? Do you have a link to them? We just canned out own chicken and the texture was so much better than the stores! This looks so amazing! I can’t wait to try it!
