		<description><![CDATA[The trick is to use cold water (if you have it) and soaking it for a minimum amount of time, 3-5 minutes, the less time the better (just be sure it&#039;s rehydrated all the way or it won&#039;t melt) and blot it with a paper towel right after you&#039;ve drained it.  I like using a pie pan (or something shallow) so that the cheese isn&#039;t on top of itself while it&#039;s soaking.]]></description>
